Bread Head, the Los Angeles sandwich chain built by two chefs from Michelin-starred Trois Mec, plans to open its fifth location in Thousand Oaks in the second quarter of 2027.

The company confirmed the expansion in a Sept. 17 press release, saying the Thousand Oaks restaurant is expected to open between April and June 2027. A specific address has not been announced.

Co-founders Jordan Snyder and Alex Williams started Bread Head as a pandemic-era popup at Grand Central Market in downtown Los Angeles. Their first day, they sold about 10 sandwiches, mostly to friends and family, Snyder told the Los Angeles Business Journal in a Tuesday, Oct. 6, profile.

Before that popup, both chefs worked under Ludo Lefebvre at Trois Mec, a 26-seat Hollywood tasting-menu restaurant that held a Michelin star before closing permanently in July 2020. When the restaurant shut down, Snyder and Williams launched their own fast-casual concept.

The path from popup to brick-and-mortar was not quick. The pair did multiple pop-ups across Los Angeles, considered a food truck and delivered for DoorDash to keep the business going. They eventually partnered with Bread Head Restaurant Group CEO Greg Willsey and former Night + Market operations director Michael Pasternak.

Bread Head opened its first permanent restaurant in Santa Monica in June 2024, followed by Manhattan Beach in June 2025 and Westwood in November 2025. A fourth location is set to open in December at Topanga Village in Woodland Hills, inside the former Veggie Grill space at 6316 Topanga Canyon Blvd.

The chain is known for sandwiches served on house-baked bread that Eater LA described as falling between focaccia and ciabatta. The New York Times named Bread Head's mozzarella sandwich one of the 26 best dishes in America, according to the company's press release.

Snyder and Williams told the Business Journal they plan to keep the brand founder-led and self-funded rather than franchising or taking outside investment.

"It's not at a place yet where we can just hand the package over to someone and say, 'Go, operate a Bread Head,'" Snyder told the Business Journal. "That's where concepts can sometimes fail – not being led by the people that truly care."

The Thousand Oaks location will be Bread Head's first restaurant in Ventura County. The company said additional details, including the address, will be announced closer to the planned second-quarter 2027 opening.
